Edilma Piedrahita has been called "the glue that keeps the Los Guácharos group together," acting as the heart, soul, and lead member of the group. The group is made up of independent, quality-focused small producers in southern Huila (close to Pitalito). Collectively, they’re converting to organic agriculture, making their own fertilizers and fungicides, installing complex water filtration systems that use gravity, stones and sand to remove all mucilage residues from waste water to not contaminate water systems. The members of the group have started the conversion to fully ecological and regenerative production, close to biodynamics. Her full-hearted commitment to her community, and her belief that steps towards sustainable production are essential for the future of coffee is a bright light within Huila Coffee.

This lot is a pacamara, with a silky smooth and sweet mouthfeel. A typically lesser grown varietal in Colombia, it's a hybrid of Pacas & Maragogype that was originally created in El Salvador during the 1950's. Known for it's huge bean size and distinctly chocolately & citrus tones, this lot is a well balanced cup from hot to cold and sings of apple pie, baking spices in it's body, and marmalade sweetness.

Edilma Piedrahita has become one of our favourite producers, with each of her coffees singing true to the definitive Huila lots we have come to know and love from Colombia. This pacamara is no exception, and something unique from a region we love so much. Thrilled to have this producer back on our list, it's no wonder we are featuring Edilma's coffees for the third time on our offer list.
