El Salvador Finca Himalaya - Natural Maragogype

Our first El Salvador offering ever! We are proud to release this lot, which is a direct relationship with a producer we visited in March of 2023. Andrew was fortunate to cup and select this lot directly while visiting Finca Himalaya. We don't purchase natural processes very often, but the careful curation of this lot expresses huge jammy tones, paired with high acidity and wine like characteristics without having an overly fermented taste. We're so grateful to know Mauricio, and purchase his fantastic coffees from his family farm.

Earlier this year, we decided it was one of our main goals of this year to expand our offer list to include countries we had never purchased from before. This led us to attend PRF El Salvador, where we met and stayed with Mauricio (Moe) Salaverria and purchased two of his lots - this being the first one. Moe's family are generational producers of specialty coffee in El Salvador since his father started separating cherry output in the 1970's and 1980's, which earned Finca Himalaya the title of first specialty coffee farm in El Salvador. Finca Himalaya has previously placed in the top 10 for Cup Of Excellence in El Salvador, showing that the pedigree of this farm is excellent. 

Another first for us, is purchasing a Maragogype! Maragogype is a very old heirloom varietal from originating in Brazil, which is also the mother of El Salvador's very famous Pacamara varietal (mother crop Maragogype, father crop Pacas varietal). 

This coffee was imported on our behalf by Republica Coffee Importers, who have known Mauricio personally for years and their families are well connected. We're proud to have worked directly with Mauricio in purchasing this lot, after visiting his farm, and being able to taste and select this offering ourselves directly at origin in March of 2023.
