Cruz Baldemar Perez Pablo is the leader of the ASDEFLOR association- Asociación de Desarrollo Flor del Café (Coffee Flower Development Association), a tiny collective of just 30 members, all of whom belong to the Mam Mayan indigenous community. As the leader of the group, Don Cruz is in charge of commercializing the group’s coffee.
To support his family, he had originally migrated to Europe to earn money, and on his return chose to start producing coffee, which offered his family a viable option for development. His lots are home to Caturra, Bourbon and Villa Sarchi varieties, with the lot we purchased being a mix of bourbon and caturra. Among other things, he championed the construction of the Associations collective wet-mill, with large concrete tanks, patio space and African beds. This wet mill has lifted the quality of producers’ in the group coffees who often don’t have reliable access to electricity, clean water or proper drying facilities to process their cherries to specialty standards.
