Ethiopia Birbirsa has been a standout coffee as an espresso and filter for years, and we're super excited to be able to have sourced this coffee. Birbirsa is from the Gediyo zone of the Gedeb district which is an incredibly mountainous region of Ethiopia. This allows the coffee crops to flourish in a diverse environment with varying ranges of vegetation growth. This washed yirgacheffe has distinct brightness and intricately placed sweetness from start to finish, and it is fundamentally different as an espresso and filter.
As a filter, this coffee pops with black tea, lemon and is incredibly floral while still maintaining body.
As an espresso, Birbirsa yields a straight up orange character, blasting you with balanced acidity and citrus notes all the way through the finish.
The versatility and complexity of this classic Ethiopian shines, and is the main reason we are thrilled to work with this coffee.

Process: Washed, soaked for 12 hours, fermentation for 36 hours, drying under raised beds for 10-12 days
